Muamba de Galinha
Widely regarded as Angola's national dish, built on red palm oil, chicken, okra, garlic, and Angola's own gindungo chile — a Bantu culinary base layered with four centuries of Portuguese colonial contact. The word 'moqueca' itself is documented as deriving from Kimbundu, and Brazilian Bahian cooking's use of dendê palm oil, okra, and coconut milk traces directly back through the transatlantic slave trade to this same West-Central African tradition. Red palm oil, not peanut, is the traditional base — peanut is a Congolese-leaning variant, not core Angolan technique.

Ingredients
- 1.5 kg chicken, cut into pieces
- 4 tbsp red palm oil (dendê)
- 1 onion, chopped
- 4 cloves garlic, minced
- 300g okra, trimmed
- 2 tomatoes, chopped
- 2-3 gindungo or other hot chiles
- 1 bay leaf
- Salt
- Cooked rice or funge, to serve
Steps
- Sauté the onion and garlic in the red palm oil.
- Add the chicken pieces and brown on all sides.
- Stir in the tomatoes, chiles, and bay leaf, and add enough water or stock to simmer.
- Cook until the chicken is tender, about 40 minutes.
- Add the okra in the last 10-15 minutes so it thickens the stew without turning overly slimy. Serve over rice or funge.
