Liège Waffles
Dense, rich, brioche-like waffles studded with pearl sugar that caramelizes into crunchy pockets — the everyday hand-held waffle of Liège, distinct from the light, yeasted Brussels waffle and a world apart from the American diner version both inspired.

Ingredients
- 3 1/2 cups bread flour
- 2 1/4 tsp instant yeast
- 1/4 cup warm milk
- 3 eggs
- 1 cup butter, softened
- 1/3 cup sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 1/2 cups Belgian pearl sugar
Steps
- Dissolve the yeast in the warm milk and let sit 5 minutes until foamy.
- Mix the flour, eggs, sugar, vanilla, and salt with the yeast mixture into a soft, sticky dough.
- Knead in the softened butter a little at a time until fully incorporated and the dough is smooth.
- Cover and let rise for about 1 hour, until doubled.
- Gently fold in the pearl sugar without crushing it, then divide the dough into balls.
- Preheat a waffle iron and cook each ball of dough for 3-4 minutes until deep golden and the sugar has caramelized in spots.
- Serve warm, plain or with toppings of your choice.
