Romeu e Julieta
Fresh, mild queijo Minas paired simply with slices of goiabada, guava paste that itself descends from Portuguese quince paste, remade with native Brazilian guava since quince was less available in the colony. Originally called just "cheese with goiabada," the salty, mild cheese exists purely to balance the guava paste's concentrated sweetness, no cooking involved; the now-common Romeo-and-Juliet name is a later popularization tied to a mid-20th-century guava-paste advertising campaign.
