Bahamian Conch Fritters
Tenderized conch folded into a batter with onion, bell pepper, and thyme, deep-fried and served with a tart lime dipping sauce — built on the classic Bahamian seasoning trilogy.

Ingredients
- 1 lb conch meat, cleaned and tenderized
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 egg
- 1/2 cup milk
- 1/2 onion, finely diced
- 1/2 bell pepper, finely diced
- 1 tsp fresh thyme
- 1 Scotch bonnet pepper, minced (seeds removed for less heat)
- Salt and pepper, to taste
- Oil, for deep-frying
- Mayonnaise, lime juice, and hot sauce, for dipping
Steps
- Finely mince the tenderized conch meat.
- Whisk the flour, baking powder, egg, and milk into a thick batter.
- Fold in the minced conch, onion, bell pepper, thyme, Scotch bonnet, salt, and pepper.
- Drop spoonfuls of the batter into hot oil and fry until golden brown and cooked through, about 3-4 minutes.
- Drain briefly and serve hot with a dipping sauce of mayonnaise, lime juice, and hot sauce.
