Madeleines
Small shell-shaped sponge cakes from Commercy, whose signature domed 'hump' only forms when cold batter meets a hot oven — skip the chill and they bake flat.

Ingredients
- 3 eggs
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 cup butter, melted and browned, plus more for the mold
- Zest of 1 lemon
Steps
- Whisk the eggs and sugar together until pale and thickened, then whisk in the vanilla.
- Fold in the flour and baking powder until just combined.
- Fold in the browned butter and lemon zest.
- Cover and refrigerate the batter for at least 1 hour, or overnight.
- Butter and flour a madeleine mold, then spoon the cold batter into each shell shape.
- Bake at 425F for 8-10 minutes, until a distinct hump forms in the center and the edges are golden.
- Unmold immediately and let cool on a rack.
