Jamaican Beef Patty
Flaky, turmeric-yellow pastry folded around Scotch bonnet-spiced ground beef — a Cornish pasty reshaped by Jamaican curry and allspice, with real turmeric giving the color, not food dye.

Ingredients
- 3 cups all-purpose flour
- 2 tsp turmeric
- 1 tbsp curry powder
- 1 tsp salt
- 1 cup cold butter, cubed
- 1 cup ice water
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 Scotch bonnet pepper, minced (seeds removed for less heat)
- 1 tsp fresh thyme
- 1/2 tsp ground allspice
- 1/2 cup breadcrumbs
- 1/2 cup beef broth
- 1 egg, beaten, for brushing
Steps
- Whisk the flour, turmeric, curry powder, and salt together, then cut in the cold butter until pea-sized crumbs form.
- Stir in the ice water just until the dough comes together. Wrap and chill for 30 minutes.
- For the filling, cook the onion, garlic, and Scotch bonnet in a pan until softened, then add the ground beef and brown it fully.
- Stir in the thyme, allspice, breadcrumbs, and beef broth, and simmer until the mixture is thick and holds together. Let cool.
- Roll the chilled dough thin and cut into circles. Spoon filling onto one half of each circle, fold over, and crimp the edges shut with a fork.
- Brush the tops with beaten egg and bake at 375F for 30-35 minutes until golden and flaky.
