Kuyrdak
A Kazakh dish of fried offal and meat traditionally made immediately after slaughtering livestock, using the liver, heart, and kidney that don't keep — a resourceful, use-it-or-lose-it dish born of herding life, not one built around choice cuts. It was historically also a preservation method: fried meat packed into sealed jars of fat could keep for a long time and travel with shepherds to pasture. Potato is a real but later addition dating to Russian colonization, worth noting as a documented evolution rather than an inauthentic shortcut.

Ingredients
- 300g lamb or beef liver, cubed
- 200g heart, cubed
- 200g kidney, cubed
- 100g lamb tail fat (or regular lamb fat)
- 2 onions, sliced
- Salt and black pepper
- Flatbread, to serve
Steps
- Render the lamb fat in a hot pan.
- Fry the offal and meat in batches until browned.
- Add the sliced onions and cook until soft and caramelized.
- Combine everything, season with salt and pepper, and serve hot with flatbread.
