Hutspot
A Dutch mash of potato, carrot, and onion tied to the 1574 Relief of Leiden during the Dutch Revolt against Spain — as the story goes, a pot of hutspot was found abandoned by fleeing Spanish troops after William of Orange flooded the polders to relieve the starving, besieged city, though modern historians treat the tale as likely legend rather than confirmed fact. Leiden still commemorates it every October 3rd with hutspot, bread, and herring. It's a genuine mash, not a stew — everything is boiled together and mashed into one dish, with smoked sausage or braised beef shank served alongside rather than simmered in.

Ingredients
- 1 kg potatoes, peeled and chunked
- 500g carrots, chunked
- 2 onions, chunked
- 3 tbsp butter
- 100ml milk
- A pinch of nutmeg
- Salt and pepper
- Rookworst (smoked sausage) or klapstuk (braised beef shank), to serve
Steps
- Boil the potatoes, carrots, and onions together until tender, about 15-20 minutes.
- Drain well.
- Mash with the butter, milk, and nutmeg until smooth.
- Season with salt and pepper.
- Serve topped with sliced smoked sausage or shredded braised beef shank.
