Pancit Bihon
Filipino stir-fried rice noodles with pork, shrimp, and vegetables in a savory broth — a birthday-table staple believed to bring long life.

Ingredients
- 250g rice vermicelli (bihon), soaked 10-12 minutes until pliable
- 200g pork belly, thinly sliced
- 150g shrimp, peeled (optional)
- 1 Chinese sausage, sliced (optional)
- 1 onion, sliced, 3 cloves garlic, minced
- 2 cups shredded cabbage
- 1 carrot, julienned
- 1 cup snap peas or green beans
- 3 cups chicken stock
- 3 tbsp soy sauce, 1 tbsp fish sauce
- Calamansi or lime wedges, to serve
- 2 tbsp oil
Steps
- Saute garlic and onion in oil, add pork, and brown well.
- Add shrimp and Chinese sausage, cook until the shrimp turns pink; push everything to one side of the pan.
- Add carrot and cabbage, stir-fry 2-3 minutes.
- Pour in stock, soy sauce, and fish sauce, bring to a simmer.
- Add the soaked bihon noodles, tossing to absorb the broth, until the liquid is mostly absorbed, about 5-8 minutes.
- Add snap peas in the last 2 minutes. Serve with calamansi or lime wedges.
