Kanelbullar (Swedish Cinnamon Buns)

Ingredients
- 4 cups all-purpose flour
- 2 1/4 tsp instant yeast
- 1/3 cup sugar
- 1 tsp ground cardamom
- 1/2 tsp salt
- 1 1/4 cups warm milk
- 1/2 cup butter, softened
- 1/2 cup butter, softened, for the filling
- 1/2 cup brown sugar, for the filling
- 2 tbsp ground cinnamon, for the filling
- 1 egg, beaten, for egg wash
- Pearl sugar, for topping
Steps
- Mix the flour, yeast, sugar, cardamom, and salt, then stir in the warm milk and softened butter to form a soft dough. Knead until smooth.
- Cover and let rise for about 1 hour, until doubled.
- Mix the filling butter, brown sugar, and cinnamon into a spreadable paste.
- Roll the dough out into a large rectangle and spread with the cinnamon filling.
- Fold the dough into thirds like a letter, then cut into strips and twist each strip into a knot.
- Place the knots on a baking sheet, cover, and let rise another 30-45 minutes.
- Brush with beaten egg, sprinkle with pearl sugar, and bake at 400F for 12-15 minutes until golden.
