Bryndzove Halusky
Small dumplings made from raw grated potato dropped straight into boiling water, tossed with tangy bryndza sheep cheese and crisp bacon — Slovakia's national dish, ruined by substituting feta for real bryndza.

Ingredients
- 3 lbs potatoes, peeled and finely grated
- 1 1/2 cups all-purpose flour
- 1 egg
- 1 tsp salt
- 8 oz bryndza cheese
- 1/4 cup sour cream
- 6 oz bacon, diced
Steps
- Squeeze excess liquid from the grated potatoes, then mix with the flour, egg, and salt into a soft, sticky dough.
- Bring a large pot of salted water to a boil. Push small pieces of the dough through a halusky board or colander with large holes directly into the boiling water.
- Cook for 3-4 minutes until the dumplings float, then drain.
- Fry the diced bacon until crisp, reserving the rendered fat.
- Mash the bryndza cheese with the sour cream until smooth and slightly warm it if needed to loosen.
- Toss the hot dumplings with the bryndza mixture until well coated, then top with the crispy bacon and its fat.
