Simit
A ring-shaped Turkish street bread twisted from two ropes of dough, dipped in grape molasses before being packed densely in sesame seeds — the molasses dip is what gives it its deep color and faint sweetness.

Ingredients
- 4 cups bread flour
- 1 tbsp sugar
- 2 1/4 tsp instant yeast
- 1 1/2 tsp salt
- 1 1/4 cups warm water
- 2 tbsp vegetable oil
- 1/2 cup grape molasses (pekmez), mixed with 1/2 cup warm water (for the dip)
- 2 cups sesame seeds
Steps
- Dissolve the yeast and sugar in the warm water and let sit 5 minutes until foamy.
- Combine the flour and salt, add the yeast mixture and oil, and knead into a smooth, elastic dough, about 10 minutes.
- Cover and let rise for 1 hour, until doubled.
- Divide into 8 portions. Roll each into a long rope about 24 inches, fold in half, and twist the two strands together into a rope, then join the ends to form a ring.
- Dip each ring into the molasses-water mixture, then press generously into a plate of sesame seeds until fully coated.
- Let the coated rings rest for 15-20 minutes, then bake at 425°F (220°C) for 20-25 minutes, until deeply golden and crisp.
- Best eaten the same day, still slightly warm.
