Ingredients
- 500g ground beef (80/20 fat ratio), divided into 4 loose balls
- 4 slices American cheese (or cheddar)
- 4 hamburger buns, split
- 1 tbsp butter, for toasting the buns
- Salt and black pepper
- Shredded lettuce, sliced tomato, sliced onion, and pickles
- Ketchup, mustard, and mayonnaise, to taste
Steps
- Toast the cut sides of the buns in butter in a skillet or on a griddle until golden. Set aside.
- Heat a heavy skillet or griddle over high heat until very hot.
- Place a loose ball of ground beef on the hot surface and immediately smash it flat with a spatula or heavy pan, pressing firmly for a few seconds to maximize surface contact.
- Season the patty generously with salt and pepper. Cook undisturbed for about 2 minutes, until deeply browned and crusted on the bottom.
- Flip the patty, immediately top with a slice of cheese, and cook 1-2 minutes more until the cheese melts and the second side is browned.
- Assemble on the toasted bun with lettuce, tomato, onion, pickles, and condiments of choice.
