Tequenos
Firm, high-melting cheese wrapped tightly in a slightly sweet dough and deep-fried — mozzarella is too stretchy and will blow out the wrapper; real tequenos need a cheese that holds its shape.

Ingredients
- 1 lb queso de mano or queso blanco, cut into sticks
- 3 cups all-purpose flour
- 1 egg
- 3 tbsp butter, softened
- 1 tsp sugar
- 1 tsp salt
- 3/4 cup warm water
- Oil, for deep-frying
Steps
- Mix the flour, egg, butter, sugar, salt, and warm water into a smooth, elastic dough. Knead until soft. Let rest for 20 minutes.
- Roll the dough thin and cut into long strips.
- Wrap each cheese stick spiral-style in a strip of dough, pinching and sealing the edges completely so no cheese is exposed.
- Heat oil to 350F and fry the tequenos in batches until deep golden on all sides.
- Drain briefly and serve hot.
