Separate Your Bananas to Slow Ripening
Bananas produce ethylene gas at their stems, and a bunch clustered together concentrates that gas around every banana in it, accelerating ripening across the whole bunch. Breaking bananas apart and storing them separately — or wrapping just the stem in plastic wrap, which is where most of the ethylene escapes — measurably slows the process. It's also why one very ripe banana in a fruit bowl can speed up everything else around it.
