Slow Freezing Is What Causes Freezer Burn
Freezer burn isn't really about time — it's caused by moisture migrating out of food as large, slow-forming ice crystals damage cell walls, then evaporating in the freezer's dry air. Wrapping food tightly (pressing out air, or vacuum-sealing) and freezing it as quickly as possible (spread out rather than in one thick block) minimizes crystal size and slows that damage considerably.
