Olive Oil Can Handle More Heat Than You Think
The popular claim that extra virgin olive oil can't be used for cooking because of its smoke point doesn't hold up well — decent EVOO typically smokes around 375-410°F (190-210°C), which covers most home sautéing and roasting. Save the priciest, most delicate EVOO for finishing/drizzling where its flavor actually shows, and reach for a refined, neutral oil (avocado, canola, refined peanut) only when you're searing at very high heat.
