Stock and Broth Freeze Better Than They Keep
Homemade stock is a low-acid, nutrient-rich liquid that's actually a favorable environment for bacterial growth, so it only keeps safely in the fridge for about 3-4 days even after a thorough boil. Freezing halts that growth entirely and barely affects flavor or gelatin content, making it the better default for anything you're not using within a few days. Freeze in flat bags or ice-cube trays so you can pull exactly the amount you need without thawing the whole batch.
