Never Refrigerate a Ripe Tomato
Below about 55°F (13°C), the enzymes responsible for developing a tomato's aroma compounds slow down and effectively stop working, which is why a refrigerated tomato tastes flat and mealy even if it looks fine. The cold also damages the membranes inside the cells, which is what causes that mushy, grainy texture once it warms back up. Keep tomatoes on the counter out of direct sun, and only refrigerate ones that are already overripe and need a day or two of extra life.
