The Windowpane Test Confirms Dough Is Kneaded
Kneading time in a recipe is a rough guess — actual gluten development depends on flour protein, hydration, and how vigorously you're working the dough. Pull off a small piece and gently stretch it between your fingers: if it tears quickly, it needs more kneading; if it stretches thin enough to see light through without tearing (the windowpane), the gluten network is developed enough to trap gas well and the dough is ready to proof.
