Raclette
A wheel of Alpine raclette cheese melted face-down and scraped directly onto boiled potatoes and pickles — an Alpine herdsmen's practice from Valais, and not a dipping dish like fondue.

Ingredients
- 2 lbs raclette cheese, cut into large wedges or half-wheels
- 2 lbs small potatoes, boiled
- Cornichons (gherkins)
- Pickled pearl onions
- Black pepper, to taste
Steps
- Melt the cut face of a raclette cheese wedge under a broiler or on a dedicated raclette grill until bubbling and lightly browned.
- Scrape the melted cheese directly over a portion of hot boiled potatoes.
- Serve immediately alongside cornichons and pickled pearl onions.
- Repeat, melting fresh cheese for each portion, so it's eaten scraped hot rather than as a dip.
