Churros con Chocolate
Spain's crisp, ridged fried dough, sugared and dunked in rich, thick drinking chocolate.

Ingredients
- 1 cup water, 2 tbsp sugar, 1/4 tsp salt, 2 tbsp butter
- 1 cup flour
- Oil, for deep-frying
- Sugar, for coating
- 200g dark chocolate, chopped
- 1 cup milk
- 1 tsp cornstarch (optional, for a thicker chocolate)
Steps
- Bring water, sugar, salt, and butter to a boil.
- Remove from heat and stir in flour all at once, mixing vigorously until a smooth, thick dough forms.
- Transfer the dough to a piping bag fitted with a star tip.
- Heat oil to 190C (375F), pipe strips of dough directly into the hot oil, cutting them to length, and fry until golden and crisp, 2-3 minutes per side.
- Drain and toss immediately in sugar while hot.
- Warm milk with chopped chocolate (and cornstarch if using, for a thicker sauce), stirring until smooth and glossy.
- Serve the churros hot with the chocolate sauce for dipping.
