Bruschetta al Pomodoro
Grilled rustic bread rubbed with raw garlic and topped with fresh chopped tomatoes, basil, and olive oil — served immediately, while the toast is still crisp.

Ingredients
- 1 loaf rustic bread (ciabatta or sourdough), sliced thick
- 3-4 ripe tomatoes, finely chopped
- 2-3 cloves garlic, 1 whole for rubbing, 1-2 minced for the topping
- 1/4 cup fresh basil, torn
- 3 tbsp extra virgin olive oil, plus more for brushing
- Salt and black pepper, to taste
Steps
- Toss the chopped tomatoes with the minced garlic, torn basil, olive oil, salt, and pepper. Let sit at room temperature for 10-15 minutes to let the flavors meld.
- Brush the bread slices with olive oil and grill or toast until golden with light char marks on both sides.
- While still warm, rub each slice once with the whole peeled garlic clove.
- Spoon the tomato mixture generously over each toast just before serving.
- Serve immediately, while the bread is still crisp.
