Burrito
A large flour tortilla tightly wrapped around seasoned ground beef, beans, rice, and cheese — folded so the filling stays sealed in even as you eat it.

Ingredients
- 4 large (10-inch) flour tortillas
- 500g ground beef
- 1 tbsp cumin, 1 tbsp chili powder, 1 tsp garlic powder, toasted briefly in oil
- 1 cup cooked rice, with cilantro and lime stirred in
- 1 1/2 cups refried or whole pinto beans, warmed
- 1 1/2 cups shredded cheddar or Tex-Mex cheese blend
- 1 cup shredded lettuce
- 1/2 cup salsa
- 2 tbsp oil
Steps
- Heat the oil in a pan and toast the cumin, chili powder, and garlic powder for about 30 seconds until fragrant.
- Add the ground beef and cook, breaking it up, until browned and cooked through. Season with salt.
- Warm the tortillas so they're pliable and won't crack when folded.
- Lay a tortilla flat and spoon a line of beans, rice, beef, cheese, lettuce, and salsa across the center, leaving a border on all sides.
- Fold in the two sides toward the center, then fold the bottom edge up and over the filling, tucking it in tightly as you roll it up into a sealed cylinder.
- Serve as is, or grill seam-side down in a dry pan for a minute to seal and lightly toast the tortilla.
