Shchi
One of the oldest documented Slavic dishes, with roots tracing back roughly a millennium to Kievan Rus, not long after cabbage itself arrived from Byzantium; the dish appears in the 16th-century Domostroy household text under an older name. The precise inventor or region is genuinely unverifiable, so it's best described as ancient rather than pinned to an exact date. Real shchi is genuinely distinct from the site's existing borscht: shchi is cabbage-based, clear to lightly cloudy, and not red at all, while borscht is beet-based, sweeter, and earthy-red. Worth noting for accuracy: borscht's 2022 UNESCO heritage recognition belongs specifically to Ukraine, not Russia, a common point of confusion.

Ingredients
- 1/2 head cabbage, shredded
- 300g beef, cubed (optional)
- 2 carrots, sliced
- 1 onion, chopped
- 2 potatoes, cubed
- 2 bay leaves
- Sour cream, to serve
- Dill, chopped, to serve
Steps
- If using beef, simmer it in water until tender, then remove and reserve the broth.
- Sauté the onion and carrot until softened.
- Add the potatoes, cabbage, bay leaves, and broth (or water for a vegetarian version), and simmer until the vegetables are tender.
- Return the beef to the pot if using.
- Serve hot, topped with sour cream and dill.
