Matoke
Green East African highland bananas steamed in their own leaves until soft, then mashed into a smooth mound — Uganda's national dish, also eaten across the wider East African Great Lakes region under the same technique.

Ingredients
- 12 matoke (green East African cooking bananas), peeled
- Banana leaves, for wrapping (or foil as a substitute)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tbsp oil
- 1/2 cup ground peanuts (optional, for a groundnut sauce)
- Salt, to taste
Steps
- Wrap the peeled matoke tightly in banana leaves, forming a sealed packet.
- Place the wrapped bananas in a steamer basket over simmering water and steam for 60-75 minutes, until completely soft.
- Unwrap the bananas and mash them smooth directly in the leaves.
- Meanwhile, saute the onion in the oil until soft, then add the tomatoes and cook down into a light sauce, stirring in the ground peanuts if using.
- Serve the mashed matoke topped with the tomato or groundnut sauce.
