Creole Jambalaya
One-pot Louisiana rice dish loaded with andouille sausage, chicken, and shrimp.

Ingredients
- 300g andouille sausage, sliced
- 300g chicken thigh, cubed
- 200g shrimp
- 1 onion, 1 green bell pepper, 2 celery stalks, chopped (the holy trinity)
- 3 cloves garlic, minced
- 400g canned diced tomatoes
- 2 cups long-grain rice
- 3 cups chicken stock
- 2 tsp cajun seasoning, 1 bay leaf
- 2 tbsp oil
Steps
- Heat oil in a large pot, brown sausage and chicken; set aside.
- Saute onion, bell pepper, and celery until softened, about 6 minutes.
- Add garlic and cajun seasoning, cook 1 minute.
- Stir in tomatoes, rice, stock, bay leaf, and browned meats.
- Bring to a boil, cover, reduce heat, and simmer 20 minutes.
- Add shrimp, cover, and cook 5-8 more minutes until shrimp are pink and rice is tender.
