Chivito
Thin-sliced steak layered with ham, melted cheese, bacon, and a fried egg on a bun — invented in Punta del Este in 1944 after a customer asked for goat and got this instead, hence the ironic name.

Ingredients
- 1 lb thin-sliced beef (churrasco-style)
- 4 sandwich rolls
- 8 slices ham
- 8 slices mozzarella
- 4 slices bacon, cooked
- 4 eggs, fried
- Lettuce, tomato, and green olives, to serve
- Mayonnaise, to serve
- Salt and pepper, to taste
Steps
- Season the thin-sliced beef with salt and pepper and grill or pan-sear quickly on high heat until just cooked through.
- Top the beef with the mozzarella while still hot so it melts.
- Slice the rolls and spread with mayonnaise.
- Layer the beef and melted cheese, ham, bacon, and a fried egg onto each roll.
- Add lettuce, tomato, and green olives.
- Serve with a mountain of fries on the side.
