Instant-Read vs. Leave-In Thermometers Differ
An instant-read thermometer is meant for a quick spot-check: insert it, get a reading in seconds, pull it out — it's not built to stay in food through cooking, especially in an oven. A leave-in probe thermometer is designed to stay inserted throughout cooking, often connected to a base unit or alarm outside the oven, letting you track internal temperature continuously without opening the oven door and losing heat. Using an instant-read as a leave-in (or a leave-in for quick spot checks across many pieces) works against what each is actually built for.
