Saba banana rolled in brown sugar with a few slices of jackfruit, wrapped tightly in a spring roll wrapper, and fried until the sugar caramelizes against the wrapper into a glassy, crackly shell — using a regular sweet banana instead of saba changes the texture entirely.

Ingredients
- 6 ripe saba bananas, halved lengthwise
- 1/2 cup brown sugar
- 6 strips ripe jackfruit
- 12 lumpia (spring roll) wrappers
- Oil, for frying
Steps
- Roll each banana half in brown sugar, coating well.
- Place a sugared banana half and a strip of jackfruit near one edge of a lumpia wrapper.
- Fold the sides in and roll up tightly, sealing the edge with a little water.
- Fry in hot oil, turning occasionally, until the wrapper is golden and the sugar has caramelized into a crisp shell.
- Drain briefly and let cool slightly before serving, as the caramelized sugar stays very hot.
